INGREDIENTS:
1 Cauliflower (stems removed and cut)
1 Parsnip (peeled and cut into chunks)
2 tablespoons bacon fat, ghee, lard or unsalted organic butter
1⁄4 cup coconut milk
Salt and pepper to taste
DIRECTIONS:
Steam cauliflower and parsnip for 10 minutes or until soft. Place steamed cauliflower/parsnip pieces in a food processor with fat of your choice, coconut milk, salt and pepper. Purée to desired consistency. Add more coconut milk if needed until desired consistency obtained. Serve warm.
